Easter marks the beginning of spring in our hearts - the sun is already high, the birds are singing, and our taste buds crave fresh, summery, and light flavours. This is a delightfully fresh salad with an intriguing flavour from raspberries and orange. This is basically spring on a plate!!
Spring-flavoured green salad

Peel the orange and cut it into thin wedges. Halve the mozzarella cherries. Arrange the rocket on a salad platter, chop the fresh cucumber on top, and finally add the orange wedges, mozzarella and raspberries. To make the dressing, put the chives, honey, olive oil, small peeled garlic clove, wine vinegar, salt, and pepper in a tall jug and blend until smooth. Drizzle the dressing over the salad just moments before serving, and enjoy immediately.
