A little forgotten, often overlooked — and yet, quince might just be one of the North’s most charming fruits. Pair it with a handful of fresh mint, and you have a drink that’s elegant, refreshing, and far more exciting than your average lemonade.

This light spritzer has a way of delighting everyone at the table, from the tiniest sippers to grown-up guests. It’s sparkling, slightly tart, and infused with the herbal coolness of mint. Simple to prepare, yet worthy of any table — whether it’s a birthday picnic or a sunlit garden brunch.
If you’re serving little ones who aren’t fond of bubbles (my son included), feel free to swap the sparkling water for still. And a little tip: make the mint tea ahead of time so it has time to chill fully before mixing.

  1. Place the ice cubes in a large pitcher. If you like, add fresh mint sprigs and thin slices of quince for garnish. Pour in the chilled mint tea, followed by the quince syrup and sparkling water. Stir gently to combine. Serve immediately — ideally with sunshine, good company, and no agenda.
