Oven Potatoes with Sage and Orange

Delightfully crispy and rich oven potatoes are a mandatory part of a Christmas dish. With this recipe, you’ll get soft potatoes on the inside and a crispy, flavorful crust on the outside.

My ex-partner was our family’s oven-potato master for years. His secret was a good Jamie Oliver recipe that he had mastered exceptionally well. The problem, however, was that those delicious potatoes always took a terribly long time—
it wasn’t unusual that by the time the potatoes were ready, the roast had long been eaten… So this recipe is inspired by the food guru Oliver, but simplified a bit. As the fat, use the leftovers from the duck confit recipe.

  1. Peel the potatoes and boil them in water for 10 minutes. Drain and transfer to a baking tray with high sides.
  2. In a mortar, mix the goose fat, sage, orange zest, and salt-pepper, lightly bruising the sage and orange zest with the pestle.
  3. Pour the mixture over the potatoes and mix well so that each potato gets seasoned.
  4. Place the potatoes in a 180°C oven and bake for 1 hour. The potatoes will be wonderfully crispy on the outside and soft inside.

Note

Tip! You can successfully clean chemicals off orange peel by washing it under running water with baking soda.
