Milk soup is a childhood classic here in Estonia. Cooked with pasta or rice, it’s a simple, delicious and maybe just a little bit quirky soup to try. But trust me – if you have never had it before, now is the right time to give it a go!
There are two ways how to approach your milk soup – sweet or savory. You can opt for the sweet option as shown in this recipe (my personal fav btw!), or try out the savoury version. Just replace the apples with pieces of pan-fried ham or bacon and some leek, and you are good to go.

Milky rice soup with honey roasted apples

Wash the rice and bring it to a boil with 400 ml of water. Cover the pot with a lid and let the rice cook until almost soft, about 10-15 minutes. Then add the milk and a piece of butter to the pot and season according to your preference, either salty or sweet. Cook until the rice is completely soft and the soup is ready.

For the sweet soup, peel and clean the apples and cut them into cubes. Put the cubes on a pan with a piece of butter and heat, stirring constantly, for 1 minute. Then add the honey and cardamom, stir through, and add 1-2 tbsp of roasted apple pieces on top of the soup.
