Peel and core the apples, then cut into cubes. Add them to a pan with butter, cinnamon, cardamom and 1 tbsp sweetener. Cook until slightly softened.

Melt the white chocolate over a double boiler by placing it in a heatproof bowl over simmering water, stirring until smooth. For the cream, mix together the cream cheese, melted white chocolate, eggs and sweetener.

Line a 20 cm cake tin with baking paper. Slice the croissants slightly open on one side and arrange them tightly in the tin. Set aside one third of the apples for topping and mix them with the almond flakes and a bit of crumbled croissant.

Fill the croissants with the remaining apples, then pour the cream cheese mixture evenly over the top. Smooth it out and sprinkle with the apple-almond mixture.

Bake in a preheated oven at 180°C for 35–45 minutes. Let the cake cool for 1–2 hours before serving.
