Christmas Tree Bites

A charming snack or an edible table decoration? These Christmas tree bites are a bit of both. Made from just carrot and cucumber, they’re a festive healthy addition to any holiday table – and a lovely DIY project to make with children.

These little veggie trees have been a regular in our family’s Christmas lineup since they first appeared in Pere ja Kodu’s December 2019 issue. That same year, we even made them live on air in Terevisioon. Since then, they’ve popped up in our celebrations more times than I can count.
They’re festive, fresh, and just the right amount of fun. Plus, they come together in no time at all and add a playful pop of colour and cheer to your table – not to mention a guaranteed round of compliments for the clever chef.

  1. Peel the carrot and cut six circles about 1 cm thick – these will form the tree “trunks.” Then, cut another six thin carrot slices just a few millimetres thick and carve out small star shapes from them using a sharp knife.
  2. Wash the cucumber thoroughly. Using a vegetable peeler, shave off long, thin strips of cucumber lengthwise – aim for six full strips.
  3. To assemble, place the thick carrot slice as the base. Fold a cucumber strip back and forth to create a tree shape, then push a toothpick through the centre to secure it into the carrot base. Adjust the folds to give it volume and height, like branches. Finally, top each one with a carrot star at the tip of the toothpick.
  4. Repeat for all six snacks and serve immediately – or place them on your holiday table as whimsical edible décor.
