These little rose-shaped bites are everything you want in a snack: warm, savoury, and irresistibly crisp around the edges. ***
Peekoni ja kartuliampsukad

A perfect mix of creamy potato, salty bacon, and melted cheese, all wrapped into a pretty little parcel that’s just as suitable for a quick bite after school as it is for a weekend brunch table.
What I love most? They’re as practical as they are pretty. You can prep them ahead, freeze them, and simply reheat—making them the ultimate go-to when the kids get home or when you need something satisfying without the fuss. Even younger kids can manage heating them up on their own in an airfryer, which makes these bites a little win for independence too.
The secret lies in thinly sliced potatoes—they need to be soft, never soggy—and a touch of thyme, plus a sprinkle of cheese to hold everything together and add that golden finish. Wrap, roll, bake… and maybe stash a few away in the freezer while you’re at it. You’ll thank yourself later.
Simple, satisfying, and with just enough flair to make everyday moments feel a bit more special.

Ingredients

Preparation

  1. Peel the potatoes and slice them as thinly as possible - if you have, use a mandolin. Place 2 bacon slices end to end, and lay the potato slices on top so that they are slightly higher than the bacon slices. Now roll up tightly from the end and shape the strip into a beautiful rose. Place on a muffin paper in a muffin tin and repeat with the remaining bacon and potato slices. Before baking, sprinkle with grated cheese, a little salt and fresh thyme if desired. Bake at 200 degrees Celsius for 35 minutes. The baked bites can also be frozen and later warmed up for an quick snack.

Note

  • TIP! When choosing salad potato varieties here, pick ones that don't fall apart. Campina, Baltic Rose or Princess, as well as the popular Gala, work well.
