Life is so much fun when you spend it doing things you truly love! Yesterday’s cooking event at Balti Jaam Market was an amazing opportunity to meet fellow food enthusiasts and receive valuable feedback on my creations. I’m genuinely happy that there are so many others who are interested in a delicious and healthy lifestyle and who keep returning to my blog in search of new and exciting food ideas. I hope I’ll continue surprising you for a long time with fun recipes and helpful tips 🙂
This delicious salad also made an appearance on yesterday’s menu, starring the incredibly healthy wakame seaweed. One evening, I decided to do some research to find out exactly what makes wakame so special, and I ended up with more than a full page of beneficial properties. Wow! Even I was surprised! I won’t rewrite the entire research here, but in short: wakame is practically a miracle food.
Besides helping to keep our skin beautiful, having a low glycemic index, and supporting cardiovascular health, this little green sea vegetable contains a huge amount of vitamins (A, C, K, B2, and seemingly half the alphabet beyond that) as well as minerals. And there are truly plenty of minerals: calcium (100 g of wakame contains about 15% of our daily requirement!), iodine, iron, magnesium, manganese, sodium, and much more.
This salad recipe was originally created for a brunch at my dear friend’s home. It happened to be one of the warmest days of the summer, with wonderfully bright sunshine, so nobody was craving anything too heavy. A light salad fit the menu perfectly!
For shopping tips: frozen wakame can be found at Umami in Balti Jaam Market, while fresh wakame is available at the salad counter in the food department of Tallinna Kaubamaja. Brown rice noodles can also be found at Umami or in stores like Prisma
