Grilling the tomatoes transforms their flavour – it becomes deeper, slightly sweet, with a subtle smoky note. Add soft, silky burrata, and the balance is just perfect.
This is exactly the kind of dish to make when you don’t want to spend hours in the kitchen but still want something truly delicious. A little grilling, a little arranging, and it’s ready.
Best enjoyed while the tomatoes are still warm and the burrata soft. Tear some bread on the side and enjoy – simple, honest, and perfect for summer.

Ingredients
Preparation
-
Mix the oil, pressed garlic and salt in a bowl, then toss the tomatoes in the mixture. Cut the coated tomatoes in half and place cut-side down on a hot grill. Grill each side on medium heat for 10–15 minutes until slightly golden and cooked through. A good sign is when the tomato skin starts to loosen.
-
Meanwhile, grill the flatbread on both sides. Arrange the grilled tomatoes on a plate and place the torn burrata in between. Drizzle with olive oil, sprinkle with flaky salt and chopped spring onion. Serve with the grilled flatbread.
