I remember when a food journalist once remarked with a hint of irony that most bloggers are super active for the first two years and then their content usually falls into hibernation. I must admit, I can definitely look in the mirror here — the void has lasted quite a while and the exact described scenario happened to me as well. Even though I’ve had over a year’s worth of material waiting in my drawer, I simply haven’t uploaded it. Now, being back home with a little baby again, my plan is to tackle the unfinished work step by step. So — I don’t want to make any big promises, but yes — there will most likely be plenty of new content appearing on Ruubik’s page in the coming months. A large part of it comes from recipes already published in the “Pere ja Kodu” family kitchen section, but there will probably be some completely new additions as well. So get your whisks, bowls and food processors ready — it’s time to start cooking again!

As the first little victory, here is the true relic of my recipe collection — raw cacao truffles. I simply don’t know a better candy! They are easy to make, store well in the fridge for a long time and are incredibly tasty, sugar-free and nourishing as well. These raw cacao truffles have been in my repertoire for over four years. I remember that when I was home with my first child, I often made a big batch to keep in the fridge, since as a breastfeeding mom I was hungry 24/7, and it was always good to grab something delicious from the pantry. Over time, I’ve also served these truffles at my own wedding (yep — I rolled 130 truffles myself!), sold them in three cafés, taught how to make them during cooking workshops and offered them as treats to oh-so-many friends. I might not have reached the magical 10,000 hours of truffle rolling, but a few thousand hours I surely have. In other words — the recipe below has been tested hundreds of times and is completely foolproof.

Exactly a year ago, in August 2019, I shared this gem with the readers of “Pere ja Kodu.” The family kitchen theme of that month was sugar-free treats — recipes with ingredients approved by parents and flavors guaranteed to be loved by kids. Now the raw cacao truffle recipe is finally available here as well and open for everyone to try. Definitely give them a go, but be warned — there’s no turning back. Once you taste them, you’ll find yourself making these truffles over and over again!

  1. Blend the oats in a food processor until fine. Wash the dates and remove the pits. Add the dates, raw cacao, coconut oil and sunflower seed butter into the food processor along with half of the shredded coconut (the rest will be used for coating). Blend until a smooth mixture forms — if necessary, stop the machine occasionally, push the mass down with a spoon, and continue blending. Form equal-sized balls from the finished mixture. Roll the balls in the remaining coconut flakes to coat them evenly on all sides. Before serving, place the truffles in the fridge for about one hour.
