To be honest, I hadn’t cooked anything with mushrooms — let alone shiitake — for a very long time. Well, the reason is pretty clear: our three-year-old young man isn’t exactly a fan of the world's rich variety of flavors, but instead holds dear our good old local buckwheat and potatoes. A proper Estonian boy, what can I say. Personally, I’m already up to my ears with potatoes and I don’t think I’ve ever cooked or eaten as much meat sauce as I have in the past year. Meat sauce happens to be one of the very few forms of meat that the demanding three-year-old will actually eat.
But now I had a lovely batch of shiitake mushrooms at home, waiting to be put to use. Oh, how I had missed that calm puttering and experimenting in the kitchen. One criminally delicious quiche, a couple of hours of peaceful baking time, and the company of my dear family — I think that’s happiness for me.
