Finely slice the cabbage and grate the carrot. Mix with mayonnaise and sour cream, and season with salt and pepper.

To prep the sauce, combine the sour cream, mustard, chopped herbs, lemon juice, and a pinch of salt and pepper in a bowl. Stir until smooth.

Season the salmon fillet with salt and pepper. Fry on a pan until just cooked through. Transfer to a plate and shred gently with a fork.

Now toast the bread - Warm the cut sides of the buns in a pan. Turn the slices around, place a slice of Cheddar on the bottom half, cover the pan with a lid, and heat until the cheese begins to melt.
