Sweet biscuits with an orange flavour are a nice substitute for gingerbreads during Christmas season. Use gingerbread cookie cutters for shaping, and decorate with icing if desired. Thanks to the coconut flour, they are also a bit richer in fibre and protein.

Slightly zesty ginger cookies are sweet, yet slightly spicy cookies, to which the orange flavour adds a lovely freshness and the ginger brings in the warmth. Thanks to the coconut flour, they are also a little healthier and adequately rich in fibre.
You can shape the cookies classically round using a glass or any other round shape thing in your kitchen. Or you could also let your creativity flow and have fun with gingerbread shapes! Because who said gingerbread moulds are only for gingerbread dough, right? And when the cookies are ready, it’s especially nice to decorate them with a little icing.

And once they are done, snuggle on the couch, grab a cup of tea and crunch-and-munch on the delicious cookies while enjoying the cozy time with family.

  1. Put the flours, ginger powder, vanilla sugar, and orange zest in a food processor and place the cold butter pieces on top. Blend everything into a coarse crumb. Then add the agave syrup and egg to the food processor and mix the dough until smooth. Pour the dough into a bowl, knead lightly, form into a ball, and let it rest for 10-15 minutes. Now roll the dough out, and shape it into your desired cookie shapes. You can press patterns onto the dough with a fork or a wooden skewer, if you wish.
  2. Bake the biscuits in the oven at 180 degrees Celsius for 12-14 minutes.

Note

  • TIP! You can also make these biscuits with regular whole wheat flour or spelt flour instead of coconut flour. Keep the amount the same - 240 g flour and 150 g butter.
