Those who once lived in Nõmme might remember the legendary Jannseni shop — and the unforgettable syrniki they sold there. These are my homage to that memory: simple, comforting, and best enjoyed with a spoonful of fresh jam, a handful of berries, and maybe a drizzle of agave syrup for that extra touch of indulgence.

Blend the cottage cheese and agave syrup with a hand blender until smooth. Add the egg and vanilla sugar and mix well. Gradually stir in the flour and knead until the dough no longer sticks to your hands. Shape the dough into a long roll, slice it into rounds, and pan-fry in a bit of oil over medium heat until golden on both sides.
