Poké has completely stolen my heart. And not so much the café poké bowls (though those are tasty too!)—but the homemade ones. Mainly because they’re insanely good and at home you can put in exactly the toppings you love. And secondly, I adore them because you can use up all those leftover bits in the fridge—and make them taste amazing at the same time. Fantastic!
Reducing food waste has been an important subject for me for a while now. Poké is one of the most delicious ways to do it. There’s always some rice left in a jar, and all those little veggie scraps from the fridge can be chopped up and turned into a poké bowl. Glamour in its coziest, tastiest form! 😀

Prepare the chicken nuggets following the instructions below, or heat up ready-made nuggets in a pan. Put the green beans into boiling water and let them sit for 1 minute. Drain, cut into smaller pieces, and mix with butter and salt. Dice the cucumber and slice the bell pepper. Arrange the rice, avocado slices, grated carrot, chicken nuggets, cucumber, green beans, and bell pepper in a bowl. If desired, sprinkle with sesame seeds and thyme, and serve with soy sauce on the side.
