These banana–oat pancakes are just ridiculously good — you’d never guess they’re actually quite healthy. Feel free to play around with toppings: they pair beautifully with jam and curd cheese, melted cheese and bacon, or peanut butter and banana slices.

  1. Mash the bananas with a fork and place the purée in a bowl. Add eggs and sugars, then whisk lightly. Pour in the oat milk and mix well. In a separate bowl, combine oat flour with baking powder and gradually stir it into the banana mixture, whisking constantly until smooth.
  2. Spoon about 2 tablespoons of batter per pancake onto a lightly oiled pan and cook over medium heat until golden on both sides.
  3. Top the warm pancakes with cottage cheese and orange marmalade, drizzle with agave syrup if desired, and enjoy!
