Crisp carrots, sweet apple, and a little dash of love. It’s juicy, it’s colourful, and it actually gets eaten. A few years ago, Uku-Robin came face-to-face with a new guest on his plate: carrot salad. He took one look and flat-out refused. But since he’s always liked raw carrots, I decided to run a little experiment.
We took two carrots—one I cut into sticks, the other he grated himself. Then came the blind taste test. Stick first. Then the grated version. A long pause. A curious look. And then a very grown-up realisation: “They taste the same!”
And just like that, friendship with carrot salad was born.
Sometimes, it’s the smallest kitchen moments that make the biggest shifts. And sometimes, all it takes is a grater, a little curiosity, and a spoonful of apple to make veggies a whole lot more loveable.

Vitamin-Rich Carrot and Apple Salad

Peel and grate the carrots. Clean the apple and grate it coarsely. Mix the grated apple and carrot together, add the lemon juice and enjoy immediately.
