  1. Clean, peel, and dice the apples. Place them in a pot with the agave syrup and cook for 40-45 minutes on low heat.
  2. Now take the thawed puff pastry sheets and roll the dough minimally to ensure the pie rises nicely in layers. Cut 10 x 10 cm squares from the puff pastry sheets. Next, make incisions about 1 cm distance inwards from the edges and cut loose the corners. Do the cuts to the opposite corners, while leaving other corners whole. Fold both cut edges crosswise over to the other side of the pastry – small twists will remain at the ends. Whisk the egg and thoroughly brush it over the base and edges of the pastry. Sprinkle a little brown sugar on the edges of the pastry and place in the oven to bake at 225 degrees Celsius for 10-12 minutes. Remove and let cool.
  3. While the pies are cooling, prepare the cream. To do this, melt the white chocolate - place a metal bowl on top of a bowl or pot of boiling water and let the chocolate melt. Whisk the cream cheese with the sugar. Mix the melted chocolate, sugar, and chopped fresh mint into the cream cheese.
  4. Now assemble the pies – place a little bit of cream in the centre of each pie and top with apple compote. You can add a small mint leaf for decoration. Enjoy immediately!
